Seasonal Food Philosophy

At Whistle Bear, we are forever striving to be knowledgeable about where our food comes from, and to be at the head of the industry when it comes to linking farm to table. Our chef’s at Whistle Bear are passionate about this movement and it is essentially at the core of our kitchen. You will not find a clearer or more compelling expression of the values of Slow Food than with our four season testament to the importance – not to mention delight – of food that has been grown with care and cooked with conviction.

Director of Food & Beverage - Bryan Gibson

Bryan began his culinary career at the early age of 16. He started his career at Ancaster Mill, but at the age of 18 left for chef’s school and worked in various restaurants in the Burlington/Oakville area. When Bryan completed chef’s school he returned to Ancaster Mill and cooked his way up the ranks to the position as Executive Chef.

Bryan has cooked at the prestigious James Beard House and in 2010 was awarded Top 30 Under 30 from the OHI. Bryan has an undeniable passion for food and is proud to now call Whistle Bear home.

Bonfire Pit

For those cool summer nights, a bonfire pit, complete with Muskoka chairs for lounging, is available for members to enjoy. Gather family and friends to share stories and laughs around the crackling fire and enjoy everyone’s favourite summer campfire treat – s’mores!
