Bryan Gibson

Bryan began his culinary journey at the age of 16 at Ancaster Mill. By 18, he left to attend chef’s school and gained experience in restaurants across Burlington and Oakville. After completing his training, he returned to Ancaster Mill, rising through the ranks to become Executive Chef. His career has taken him to the James Beard House, and in 2010 he was named one of the OHI’s Top 30 Under 30. Today, Bryan brings his experience and creativity to the culinary program at Whistle Bear.

 

EXECUTIVE CHEF

Brian Sousa

Brian began his culinary journey at the age of 14 as a dishwasher at a family-run restaurant. He quickly developed a passion for the industry and went on to gain experience in kitchens across the region and in Toronto while attending chef’s school. After completing his training, he became Head Chef at a local steakhouse before joining Whistle Bear in 2006. His long-standing connection to the club continues to shape his experience in the kitchen.
